Banana Nice Cream Bowl with Granola & Pitaya Scoops

Got a late start to my day and decided to make a quick breakfast. I had some left over "pitaya ice cream" and granola I made from last week that I thought would be perfect for a banana ice cream bowl. Full recipe below. 

Ingredients

Pitaya Ice Cream
1 frozen bananas
1 packs (100 grams) of frozen pitaya
splash of almond milk

Banana Ice Cream
2 frozen bananas
Splash of almond milk

Granola
1 cup rolled oats
1/2 cup walnuts
2 tbsp sunflower seeds
2 tbsp pumpkin seeds
2 tbsp almonds
2 tbsp agave syrup
1 tsp cinnamon
1 tsp vanilla extract

Instructions

Add ingredients for the pitaya ice cream to a high-speed blender or food processor and blend until smooth. Place in freezer until firm.

Preheat oven to 325F, mix all granola ingredients in a bowl and spread on to a baking sheet. Bake for about 20-25 minutes, stir and re-spread a few times.

Use the same method as you did for pitaya ice cream to make your banana ice cream. Add banana ice cream to a bowl, add a few scoops of pitaya ice cream, a handful of the granola and chunks of pineapple and coconut flakes. Enjoy!
