Vegan Beet & Bean Burger
- 3 medium sized beets (about 1 1/2 cup), peeled and cut into 1/2" inch pieces
- 1 cup kidney beans, cooked
- 3/4 cup oatmeal
- 1/2 cup red onion, chopped
- 1 garlic clove
- 1 tsp cumin
- 1 tsp chili powder
- Pinch of salt and pepper
Add beets to a food processor and pulse a few times. Add the rest of the ingredients to the food processor and process until combined with the beets. Only process until the ingredients are all mixed together. You don't want the it to turn into a "paste". Set in fridge for 30 minutes.
Form mixture into patties, this recipe made 4 burgers, on the larger side. Heat oil under medium heat in a large skillet and add burgers. Cook for about 12 minutes, flipping halfway through.
Assemble burgers on a bun with your favorite toppings. For this recipe I am using a organic bun, vegan mayo, ketchup, lettuce, tomato, onion and vegan cheese. Enjoy!
