Pasta with Vegan Cauliflower Sauce
Mac and Cheese is one of my favorite meals ever. I could seriously eat it every day. Today I wanted something "cheesy" but completely without the "cheese". I realized I had some leftover steamed cauliflower from the other day and decided to make a cauliflower cheese sauce. This recipe is super simple and healthy. I normally like to add other vegetables such as broccoli, peas, spinach or kale but didn't have any at home. Feel free to add any of those to make it more colorful and nutritious.
- 2 cups uncooked quinoa pasta
- 1 1/3 cup steamed cauliflower
- 1/3 cup plant milk, I used Silk unsweetened almond milk
- 1/3 cup vegetable broth
- 1,5 tbsp nutritional yeast
- 1/2 tsp garlic powder
- 1 tsp lemon juice
- pinch of salt and pepper
Cook pasta according to package instructions and set aside. Steam cauliflower. Add all ingredients to a high speed blender or food processor and blend until smooth and creamy. Taste sauce and add more salt and pepper if needed. Add sauce to a pan and heat until warm. Mix with pasta and serve. Enjoy!
