Hey guys! I went to Fred Meyer yesterday and got a bunch of produce. I was about to cook myself some spaghetti when I got home, but as I kept unpacking, I realized I had bought everything I needed to make zucchini noodles. Its been a while since I made a recipe with zucchini noodles so decided to make a creamy avocado-basil dressing and holy yum! I ate almost all of the food, which was way too much for one person. The recipe serves two, or one very hungry person!

Ingredients

  • 2 medium sized zucchinis
  • 2 tbsp tahini sauce
  • 1 ripe avocado
  • 2 tbsp pumpkin seeds
  • 1 tbsp nutritional yeast
  • 1/4 cup fresh basil
  • 1/4 cup water or more, if needed
  • juice from 1/2 lemon
  • pinch of salt and pepper
  • 1/4 cup grape or cherry tomatoes, halved
     

Instructions

Make noodles by using a spiralizer or spiral slicer. You can also use a potato peeler and peel the zucchini, which will make wider noodles. Set aside in a bowl while making the sauce.

Add all ingredients but tomatoes to a high speed blender or food processor and blend until smooth. Add more water if needed. Pour dressing over noodles, add tomatoes, pinch of salt and pepper. Enjoy!
