Spicy Broccoli Salad
- 2 heads red leaf lettuce, chopped
- 3 cups broccoli, cut into bite sized pieces
- 1/2 red bell pepper, sliced
- 1 tsp olive oil
- 2 garlic cloves
- 1/4 cup peanut butter
- 2 tbsp tamari sauce
- 1/2 tbsp agave syrup
- juice from 1/2 lime
- 2 tbsp water, or more if needed
- 1 tsp grated ginger
- 1/2 tsp cayenne powder
- 1/2 tbsp sesame seeds
- handful of cilantro
Heat oil under medium heat in a large skillet. Add garlic and cook for one minute then add broccoli and bell peppers, cook until tender.
To make sauce, add peanut butter, tamari sauce, agave, lime juice, ginger, cayenne powder and water to a bowl and whisk until smooth.
Add lettuce to a large salad bowl, then continue adding sautéed broccoli and bell pepper, drizzle sauce onto and finish topping with cilantro and sesame seeds. Enjoy!
