Portobello Mushroom Bowl

Portobello mushroom is one of my favorite things to throw on the grill. I don't have an outdoor grill at the moment so I tend to use my grilling pan which works great. Use whatever you have on hand and prefer. 

Ingredients

  • 1 portobello mushroom
  • 1/2 zucchini, sliced 
  • 1 tbsp tamari sauce
  • 1 cup rice, cooked
  • 1 cup shredded lettuce
  • 1/2 avocado, mashed
  • handful of cilantro
  • 2 tbsp vegenaise
  • 1 tsp Sriracha

Instructions

Heat oil in a grilling pan under medium head and add the whole mushroom, and cook for 5 minutes. Flip mushroom, add zucchini and tamari sauce. Cook for another 5 minutes, flipping zucchini after 2-3 minutes. Remove mushroom and place on a cutting board, slice into thin or thicker pieces depending on your preference. 

Mix vegenaise and sriracha in a small bowl. Add cooked rice to a bowl, then lettuce, zucchini, mushroom and avocado. Garnish with cilantro and dressing. Enjoy!
