- 1/2 cup soy milk
- 1/3 cup water
- 1/2 cup unbleached all-purpose flour
- 1/3 cup whole wheat flour
- 2 tbsp almond flour
- 1/4 tsp salt
- 1 tbsp melted vegan butter
Combine soy milk, water, flour, salt and vegan butter in a large mixing bowl. Grease a skillet with oil or vegan margarine and heat until hot. Pour batter into skillet, about 3-4 tablespoons. Swirl until bottom is covered, cook for 2 minutes or until slightly browned, flip and cook other side until golden.
Place crepe onto a plate and fill with peanut butter, top with nectarines, blackberries, coconut flakes and chocolate sauce. You can fill your crepe with anything else you'd like. Sugar and cinnamon, other fruits and sauces if you don't have the fillings or toppings used in this recipe. Enjoy!
