Kelp Noodle Stir Fry
- 2 cups butternut squash noodles
- 1 tbsp olive oil
- 1/3 cup Toby's Lite Jalapeno Tofu Spread
- 1/2 avocado
- 3 leaves fresh basil
- Pinch of salt and pepper
- Heat oil in a large skillet over medium heat. Sauté noodles for 5 minutes.
In a large pan, heat oil under medium heat. Add onion and bell pepper, cook for 5 minutes. Add kale and noodles. Cook for another minute before adding soy sauce.
Plate and garnish with Toby’s Tofu, fresh basil, lemon pepper + more soy sauce if needed. Enjoy!
