Whole Roasted Carrots with Garlic
Not sure about you guys, but I love, love, love carrots; especially baked with loads of garlic. Normally, this is something I make as a side dish and that was the plan today. However, I ended up not cooking anything else besides the carrots. I left the table feeling full and completely satisfied. If you're into carrots, this recipe is a must. If you like rosemary and mint, I would suggest adding a tablespoon of each, chopped finely.
1 bunch of carrots, washed and scrubbed
5 garlic cloves, minced
2 tbsp olive oil
2 tbsp balsamic vinegar
1 tbsp fresh thyme
pinch of salt
Preheat oven to 400°F and line a baking sheet.
Slice carrots lengthwise, add to a large bowl with the rest of the ingredients and toss until combined. Transfer carrots to the lined baking sheet and pour the rest of the mix over the carrots Bake until tender, tossing about half-way through.
Remove from oven, transfer to a plate and serve. Enjoy!
