1 ½ cups kelp noodles, drained and rinsed
1 tbsp olive oil
¼ red onion, sliced thin
½ red bell pepper, sliced thin
1 cup packed kale
½ tbsp soy sauce
Pinch of lemon pepper
1 tbsp fresh basil, chopped
2 tbsp Toby’s Lite Jalapeno Tofu
In a large pan, heat oil under medium heat. Add onion and bell pepper, cook for 5 minutes. Add kale and noodles. Cook for another minute or so before adding soy sauce.
Plate and garnish with Toby’s Tofu, fresh basil, lemon pepper and more soy sauce if needed.
