Vegan Crepes

Ingredients

  • 1/2 cup soy milk

  • 1/3 cup water

  • 1/2 cup unbleached all-purpose flour

  • 1/3 cup whole wheat flour

  • 2 tbsp almond flour

  • 1/4 tsp salt

  • 1 tbsp melted vegan butter

Instructions

Combine soy milk, water, flour, salt and vegan butter in a large mixing bowl. Grease a skillet with oil or vegan margarine and heat until hot. Pour batter into skillet, about 3-4 tablespoons. Swirl until bottom is covered, cook for 2 minutes or until slightly browned, flip and cook other side until golden.

Place crepe onto a plate and fill with peanut butter, top with nectarines, blackberries, coconut flakes and drizzle with chocolate sauce. You can really fill your crepe with anything you like; sugar and cinnamon, fruits, jam or sauces if you don't have the fillings or toppings used in this recipe.
