Hearty Quinoa Salad

ingredients

  • 1.5 cup cooked quinoa

  • 1 head kale, chopped

  • ½ delicata squash, about 2 cups

  • ½ cup italian parsley, chopped

  • ½ cup pecans

  • ½ cup cranberries

  • 6 large dates, pitted & sliced

  • Oil

  • Lemon juice

  • Salt & pepper

  • Toby’s Original Tofu

instructions

Cook quinoa according to package instructions. Toss sliced squash in oil, heat oven to 450 and bake until golden brown/ crispy. Let cool for a few minutes.

Add quinoa, kale, parsley to a large bowl and mix. Next, add squash, pecans, cranberries, dates. Drizzle with oil of choice (optional), squeeze lemon juice and add salt + pepper. Add a dollop of your favorite Toby’s Tofu. We used the Original for this one.
